In this paper.the effect of pectolytic enzymes treatment to the quality of concentrated Hawthorn Juice and the enzymatic decomposition of pectic substrances under different conditions are studied.

 
  • 本試驗主要研究了濃縮山楂汁加工工藝中酶處理對山楂浸出汁品質(zhì)的影響,以及在不同條件下果膠酶對果膠質(zhì)的分解效果,并找出了脫膠程度與濃縮山楂汁質(zhì)量的關(guān)系。
